Beautiful reddish purple color with violet steaks. The nose: little red berries and spring flowers (violets), real pepper notes. The wine is round in the mouth, it has a nice freshness and the final reveals the tannins that gives it a nice length.
Grape variety: 100% Mondeuse. Ancient varietals of Savoy that gave birth to Syrah.
Vinification / maturing : Hand-picking, partial de-stemming for the maceration: 50 % of the bunches of grapes. Maceration lasts for two weeks under controlled temperature. Maturation: 6 months in vats.
Service: Enjoy it now preferably 15-16°C. Can be stored 2 or 3 years.
Gastronomy: Pork meet (charcuterie) or leg of lamb. Perfect with cheese.
